Security Level options - what do they do?

Hi,
For the first option 'Security level' the options are Essentially off, Low, Medium, High and Under Attack.
I can't find any information to what these actually then do? Trying to decide what the 'normal' state should be for my website.
At install it's set to Essentially off.

It’s a bit of a weirdly labeled setting in Cloudflare. It’s not really about security (your site is secure regardless of the setting). It really should be called, “How aggressive/annoying do you want to be with verifying traffic is human with things like captchas”.

I leave my sites at “Essentially off” unless automated traffic starts causing an actual problem.. then can dial it in at that point.
