Hello, I would like to purchase in order to cover 2 installations. The first one is "domain.com" and the second one is "subdomain.domain.com" . The whole thing works as a single website but for some reasons it had to be handled that way. This is not a multisite installation. Can it be handled license wise as a multisite, in order to cover both parts of the website with one purchase?

It depends on what you are trying to do exactly. If you are trying to use an R2 bucket for Media, a single license on the primary site will cover usage for all the sites in the multisite network.

I am planning to use it for the R2 offload option. But I want to make it clear that this is not a single multisite installation but two separate wordpress installations. The one is something like "domain.com" and the second one is "subdomain.domain.com" . For the website visitor is like a one site experience though, except parts of the website are in the subdomain due to the main domain's theme limitations. So , to confirm, will a single purchase cover both installations regarding the R2 offloading part? Thank you in advance for your reply.
No, a single license would only cover both (and as many sites that you have) if it’s a multisite setup in WordPress.
